New Mexican Restaurants in Strasburg, CO

“My in-laws introduced us to this restaurant over the weekend. It was a delightful little place, and the Salinas steak tacos were fantastic! The rice could use a little more flavor, but I may be just a little picky, having grown up in AZ. My mom's Spanish rice was amazing and rivaled many restaurants we frequented there. Salinas restaurant reminded me a lot of the little hometown restaurant that my mom worked at for many years. I truly enjoyed my experience at Salinas.“

“It's a food truck in a old bowling alley parking lot. We saw the reviews online and we are glad we tried it. I had Street Tacos and my husband had a lunch chimichanga. They were both good. The owners were nice. The truck and sitting area was clean.“
