Came here for some late lunch after hiking in the Rocky Mountain National Park. Wife was craving for some Vietnamese food and Google took us here 😂
We arrived at around 3pm (just passed their lunch hour) but the kitchen was still open so we were able to get our beef pho and vermicelli.

Pho Café 31 is a Vietnamese restaurant with a modern feeling and very well decorated. The food is fresh and delicious. The Pho portions are very generous with lots of meat in the pho. The beef pho is pretty standard as you would expect from a Vietnamese restaurant. The pork vermicelli is memorable because the pork is marinated and baked, so the meat is really tasty and crispy. Other meals include soft shelf crab, hot and sour soup, and Singapore noodles, which are all very delicious. An avocado smoothie with boba is also available, and the boba are soft and chewy. The service is always great and kind, and the staff are amazing. The restaurant is a lovely, quiet place for a delicious and filling meal. It is quite a good place for Vietnamese food if you are in the neighborhood.
