I am heartbroken to hear that the Blu Cow is being replaced by a social media hub. A social media hub? Seriously? Simone worked hard to carry her father’s legacy on as every true local supported her in the process and now Vail is going to remove an institution to make way for more changes that alienate the local community. Shame on you, Vail.

Forget the slopes….the Blu Cow is THE reason to be in Vail. Family owned for generations (it shows), this is a charming place to go for casual, cozy and very welcoming apres-ski. A limited - but delicious - menu and a bartender (Chris) who makes Tom Cruise in Cocktail look like an amateur. Chatelaine Simone is charm-personified and a generous hostess.

It’s a great shame that wealth has Trumped taste and the voice of the people to force out (April ‘26) this wonderful, long-standing gem in order to make way for more unnecessary high-end retail. Vail is the loser

The Blü Cow is the single biggest reason my family skis Vail, and it has had our hearts for almost a decade. My husband and our children have been going there year after year, and it truly feels like our cozy home base in the village. This is the spot we think of first when planning a Vail trip because it is so unique and eclectic, with a warm, welcoming, old-Vail feel that you just do not find anywhere else. Our kids are literally growing up on the Swiss hot dogs, some of their very first solid foods. The food is fantastic, especially the hot dogs and sausages, and the space is small, intimate, and always buzzing in the best way, making it the perfect place to tuck in with family after a day on the mountain. The owner, Simone, is absolutely wonderful and clearly takes so much pride in her restaurant and its history, and everyone who works there is fabulous, friendly, efficient, and genuinely happy you came in. Honestly, if this restaurant were not located in Vail, we would not even consider skiing there, because for us this is the best place for après and a huge part of what makes Vail special. We hope to continue enjoying Blü Cow for many years to come, because it is incredibly special to our family and such a wonderful, cozy place to eat and bring the people we love.

We visited here twice during our trip to Vail, which shows how much we enjoyed it. We absolutely loved the Swiss Hot Dog, Toasted Sub, and Ernst's Famous Uber Soup.

The service was excellent. Everyone working was kind and welcoming. The restaurant was cozy and inviting.
I look forward to coming back a third time before our trip ends.

We were excited to try Blü Cow in Vail since we love unique, funky places. The décor was cozy and the Swiss Dog tasted good but wasn’t worth $17. Two hot chocolates and a soup brought the total to $68 — expensive but expected for a ski town.

We were told the soup would take 10 minutes, but after 30 minutes it still hadn’t come. When we politely asked for a refund, the owner came out yelling at my wife in front of everyone, insisting we hadn’t waited long and being shockingly rude. The soup finally arrived as we were leaving — decent, but not worth the price or the awful experience.

We’ve never been treated so disrespectfully at a restaurant. Overpriced food, long waits, and an aggressive owner — we won’t be back.
It will be interesting how/if the owner responds. 🧐

Had a small get-together here for my girlfriends birthday yesterday. We drove in from Colorado Springs and met with others who drove from Grand Junction. The owner was incredibly accommodating and welcoming of us showing up with short notice to have a small event at her establishment. The food was wonderful, and their coffee drinks were phenomenal. I look forward to visiting here again!
