To Whom It May Concern,

I am writing to formally report a food safety concern regarding Capitol Bistro, a food service establishment located in Washington, D.C.

Date of Incident: December 29, 2025
On the above date, I personally observed food service employees at Capitol Bistro using latex gloves while preparing food items intended for customer consumption. The gloves were used in direct contact with food during preparation and service.
Due to concerns related to food safety and potential allergic reactions associated with latex exposure, I addressed this issue directly with the on-site manager. I spoke with the manager on two separate occasions on December 26, 2025 and againon 12/28/2025, to notify him of the concern. On both occasions, the manager acknowledged the use of latex gloves but stated that he did not care and did not intend to change the practice.

The continued use of latex gloves in food preparation raises serious public health concerns, particularly for individuals with latex allergies. Best practices and regulatory guidance emphasize the importance of preventing food contamination and protecting consumers from avoidable allergen exposure, including the use of appropriate non-latex, food-safe gloves.

We went they told us if they leave orange juice on our table they charge us extra. While we were eating they put the bill down. Outrageous. There is nobody there.

My family and I visited DC to visit the museum of the Bible , Capitol bistro looked like it was the only place that offered a viriety near the museum , so we decided to try it , they have a small station that serves made to order omelets , they also have your typical options like eggs , sausage , bacon , and French toast , they have fruit and yogurt and well as oatmeal , plenty of options for tea and coffee and also pastries , it is your typical hotel breakfast plus a few other options , for the price I didn’t think it was worth it at all at $24.95 per person , even if it was buffet style , please note that I did not stay at the hotel that it is apart of which is the holiday inn , we literally just walked in for the restaurant, and because of this we were asked to pay cash , there were no signs up , and I don’t know if that’s actually true or not but , that’s how we paid , we wouldn’t go back but it is very convenient if your going to the museum of the Bible ,

A bit on the pricey side, but they have all you can eat breakfast. It's also convenient if you're staying at the hotel. Our server and hosts were really friendly and attentive. We were a bit confused when we got there, but once you're seated, you are free to get up and get food. The server will help with drink options. Overall, it was a pretty great experience.

We ate here for breakfast on two of the days we were staying at this hotel. The staff is very friendly and attentive. The buffet had nice options and the waitress will take your custom omelet orders. There were things out of the buffet and the waitresses would immediately report it to the kitchen and then would update you when the food was brought out. What better service can you ask for then that! We also like that the orange juice and coffee was included in the buffet price (and you can have both!). The buffet is a little expensive, but it you consider your drinks are included and getting the omelet on top of the buffet, it really isn't that pricey. After 20% tip our bill each morning was $57 for two people.

This buffet was amazing. Had so many options from turkey and pork sausage, cage free eggs, oatmeal bar, cereal bar, yogurt Parfets, bagels, and croissants as well, over 4 types. I was very impressed with the service as well. So friendly and prompt. Our waitress was Amsale, she was so sweet and kind to our kids. Thank you all for a nice relaxing breakfast to start our day.

Very alright. Nothing great, nothing over the top. Food selection was alright. $21 for a breakfast seems a little expensive though. Starbucks right down the hall is a better choice.

A real treat. Our breakfasts were excellent - both my wife’s omelet and my delicious Eggs Benedict. Better than this was the service and I’m sorry I don’t recall our waitresses’ name but she was just a treasure. When my wife ordered her omelet from the menu she advised her to take advantage of the buffet to both save money and have more choice of ingredients. Imagine that! And my wife didn't even have to go to the buffet - the waitress took the order and brought it to the table. Despite being busy she kept our coffee cups filled and put smiles on our faces. It was a nice way to start the day and we would definitely go back.

The key word is convenient. It isn’t fancy, and the food is okay, we had a good server. Lot of kids and it is a buffet line, so look out for rude people who don’t close the lids on hot foods or use their hands to get rolls instead of tongs. Like I said considering that you want to get out and sightsee convenience is the key.

Excellent customer service team members are very attentive to any needs at the table. Didn’t have to wait for anything-coffee, water,juice, picking up plates all happened like we were the only people in the bistro despite it being very busy.

Vegetarian options: Wide selection of pastries, fruits, yogurts, granola, cereals, potatoes.
