We hired Red Mesa for our wedding in December 2025. We went with them because we wanted Latin food at the wedding and saw very good reviews. The two positives from our experience were the taste of the food and the food displays were beautiful. However, the rest of our experience wasn’t the best. Communication was all over the place. Sometimes we’d get a response quickly and sometimes it would take days to get a response. We did our tasting in August 2025. I highlighted major concerns to Mabelissa during the tasting. I had heard from a previous couple that hired Red Mesa that portions were very small. I mentioned this to Mabelissa and she promised she’d make sure portions were adequate and uniform. She took a copious amount of notes during the tasting about our concerns and critiques. Fast forward to our final meeting in October… Mabelissa had a family emergency and I told her I was okay with rescheduling the meeting but she said she was fine. The meeting was all over the place and when it came time to finalizing the menu, she didn’t remember any of the menu we had picked. When I mentioned she had taken notes about everything, she told me she had spilled coffee on her notes and no longer had access to them. We were less than two months from the wedding and I had to remind her of the entire menu plus all the critiques/changes we wanted, it was extremely stressful.
On the day of the wedding, the portions our guests were served were very small. The menu consisted of beef and chicken fajitas. Several of our guests had plates with a ton of the fajita veggies but only 1-2 strips of meat. We also paid for fruit cups because we had a Mexican themed wedding. The fruit cups were $6/each… the cups that were provided were extremely small (3-4 pieces of fruit) for the price we paid.
The other major issue was the alcohol. We had a head count of 190 but only had about 150 guests the day of the wedding. We paid for 100 guests to have unlimited alcohol because only 50 of our guests actually consume alcohol due to religious purposes. The whole idea of not purchasing alcohol for everyone was a back and forth issue with Red Mesa. Ultimately, the day of the wedding, we were told all the alcohol had run out by the end of the cocktail hour. My husband and I were very confused as to how this happened so quickly when only a quarter of our guests consume alcohol and not even all of them had gotten a drink. We also paid for champagne for those that consumed alcohol and we provided ciders for our other guests. Over half of our guests did not receive either for the toast. My husband and I were not served either and we did not have anything to drink for our toast, so we had to fake it.
All in all, we hired Red Mesa because we wanted Latin food at our wedding but that decision quickly became the biggest regret we have from our wedding. What we paid for catering was not on par for the services we received and it was not worth all the added stress we had during the wedding planning.
