I'm not sure what's going on but they don't close at 7:00 on Monday - Friday. Even as I'm in front of the truck right now on a Monday Evening at 6:30 PM it looks like they've been closed for hours already.
It is a Taco Truck so you need to have your eyes open to find it. The Tortas and Sopes are great. I am from California so it is hard to find anywhere around here that is good Mexican, but this place isn't bad. You should give it a try.

AMAZING tacos spot!! Best tacos I've had in Sarasota holy cow! Get the carne asada on corn tortillas and use both sauces. I can't wait to try everything else. Also they're EXTREMELY fast. Super friendly too :) busy at lunch time. It's a taco truck so gotta eat in your car, minimal parking around.
