Not quite sure I understand the raves here. When we went, we all agreed it was...fine. The carnitas tacos had generous portions of carnitas (which they should for the price), and the pork had a nicely crisped exterior, but it was also lethally dry. The short rib was oddly lean and flavorless, the sauce more-or-less soy sauce---I kept thinking, "Hmmmm, this tastes discomfitingly like teriyaki beef jerky." Pork belly fared somewhat better. I think Madre would benefit from a "street taco" option where the filling of one of their tacos was split into two smaller tacos. The recipes are strong and the ingredients are fresh. I thought the tacos were overstuffed and a bit awkward to eat as a result. I'd drop an extra bucks to modify one big taco into two smaller ones. I dare y'all to do it ☝️
