Boise has seen a few Ramen shops come and go over the last five years or so. These guys are the real deal. I'm no expert, but I've visited ramen shops all over the US and the Tonkotsu here was some of the best I've ever had. There is no substitution for a well-made broth and a balanced selection of toppings, and the pork wasn't too dry or overly fatty. I am so happy Boise finally has a quality ramen shop. I can't wait to come back!
