Waited over an hour for brunch to be served when in town for Bourbon and Beyond. Food was tasty and waitress was apologetic but would not return.

Taylor and management were incredible. Obviously a very popular spot because a few of the items we had ordered were 86'd already but it must've been fate because everything we had was spectacular. Their take on the Ceaser salad, the tomato & ricotta, and the arancini amuse bouche stole the show. Pork cutlet was also awesome, we loved the red pepper slaw(?) on top. Olive oil cake was also amazing but at that point we were already stuffed. Can't speak enough to the professionalism and quality of this place. My wife and I have already discussed coming back for a second go-round on our 5 days trip!!

Our experience was terrific. We did the Prix Fixe dinner since we had tickets to the theatre. The grilled Caesar, trout, and focaccia bread were outstanding. The desserts were delish, too. Our server, Lance, was a real gem! We will be back🥰

Because we were going to see MJ - The Musical, we opted for the fixed menu. There were more options than I thought there'd be and the portion sizes were extremely generous. Everything was delicious, and the staff was all very efficient and professional, especially our server, Aaliyah.

Overall, our dinner at Proof was just okay. Our server was wonderful but even her skills could not make up for the mediocre food. One exception was the Heirloom Melons with Speck—delicious. Two of us ordered the Grilled Trout and though the meat of the fish was good, the skin was too burned, the chickpeas were oddly included, the labneh was messy—I don't like to have to dissect my food to get to a tasty bite. Another two ordered the Pasta Arrabbiata which was okay though the pasta was not al dente. The risotto was too wet, but firmed up as it was consumed. The gnocchi got a “meh” review. The hamburger and fries were well received. There are many good restaurants in Louisville but I certainly would not include Proof in this category based upon our combined experiences.

We stayed at the hotel and really enjoyed both the bar and the restaurant. The service was excellent, the ambiance was very vibrant and the food was delicious.

Very limited menu where none of the items seems to compliment each other. The offerings were simply too random and nothing really connected. Had the charred octopus appetizer followed by Rainbow trout which were both cooked perfect. My wife skipped ordering an entree because everything was so random and the photos on line were so out of date that she couldn't get an idea of what she could order. Nice location, clean, good food, and good people, but I don't think we will return until the menu gets some connectivity.

Awesome stop for a custom whiskey flight. I hit the jackpot with expert bartender CC, who took my request for a custom whiskey flight as a challenge and knocked it out of the park with three choices setup in the perfect order. She knew the story behind each one and quickly looked up some additional details on her phone when she wasn't sure. The bar is clean and spacious and full of light. Whiskies are arranged by family for easy identification. She described a "Black Manhattan" that sounded delicious, but I'll have to try that next time. Proof on Main makes the perfect place to treat your taste buds while waiting for a distillery tour. Slainte!

I'm not a fan of hotel restaurants but lately we've enjoyed several hotel/chef collaborations. Since we were staying at 21C Hotel, I booked dinner at Proof. Unfortunately. We started with tartare (one tuna, one beef). The beef had so much lemon zest (drowning) that I began to question the freshness of the meat. The tuna had too much lemon as well. And who serves porous crostini with finely chopped anything (see photo). The fine art of tartare is a lost gem. Pork Milanese was nicely plated and very generous. It was tender and nicely cooked. However, the Rock Shrimp Risotto was an unmitigated disaster. It was topped with lots if funnel, and there were few shrimp. Worse, any attempt to recreate the creamy texture and flavor of good risotto was absent, but an odd crunchy substance ruined the expected simplicity. The wine list was robust and diverse. And the bar has a great cocktail menu and a half-million bourbons to choose from. Our server was friendly and attentive. Overall I cannot recommend Proof. Too bad because the hotel and surrounding area are terrific.

We ate there several times, for lunch, dinner and breakfast, while staying at the hotel. A lot of the menu items repeat. The prix fixe was helpful to have before seeing a show. The tiramisu was good. The salad was excellent! The cocktails were good too. The omelette was pretty dry and bland and the grits were not cooked or something because they were, well...really gritty. Like sand. The service was excellent.

Mid-level spot overall. We ordered the tuna tartar, trout, gnocchi pasta and focaccia. The bread was great and I would recommend but the rest was okay.

Bison burger was delicious as always. Gem salad was spectacular. Our server was attentive but not imposing, and very kind. Try the Kevin Sua Da cocktail!

Service by Rosemary was excellent and 6pm seating and table reserved for our 7th anniversary dinner really nice...Thanks! However, the food wasn't as great as in our past visits! The Bison Burger ordered Medium was on the rare side and bun soggy on both sides and flattened. The Shrimp Risotto was tasty, but food temps on both dishes not very hot. However, the Grilled Caesar Salad was delicious and perfectly prepared, as well as the Focaccia Bread. The drinks from the bar were great too! We didn't bring attention to these issues with our Server, because of how busy the restaurant had gotten when the entrees arrived, and the time to wait for the dishes to be improved upon would have made us late for getting to our next destination.
