This morning I went to the beating heart of Shelburne Falls itself, The Foxtown Diner Upon arrival, one is immediately enthused by the delicious bouquet exuded from the kitchen. As usual, I was greeted by their kind and efficient staff, as well as by their excellent Chef! I enjoyed the gentle interplay of root and bulb that was potato with onion. They were if anything improved by the golden nepenthe escaping from its billowing albumen cloud. The sausage were the perfect combination...

It’s true American diner, so do not expect avocado (they do not have that) or arugula salad or any other big city/modern-healthy food you can think of you if you come from the city (aka Manhattan, Boston, LA, Chicago etc). The only green on the menu is spinach, which I asked to be sautéed on a side.

However, the food is a nice American (south?) diner food, good egg sandwiches with sausage or hash potatoes options with eggs.
