I lived in New Mexico for 29 years and had learned to cook in that style of cooking. I don't speak Spanish fluently, so I had some difficulty, because all the labels were in Spanish. I got some help from the person there to get what I was after.
Whether you go to the store where it has a small carry out in the back or you go to the restaurant (Pollo Feliz) next door, you're going to enjoy every single bite of these dishes I'd recommend you getting: Al Pastor (Marinated Pork), Chorizo (Sausage), Lengua (Beef Tongue), Tripe (Stomach Lining) and/or Beef Head Tacos.
