After leaving a 1-star review on Google describing difficulties we had with the service and food, Terlingua's leadership team responded directly to my wife and me within 48 hours and were extremely gracious and generous. I want to acknowledge and appreciate Terlingua for this - it's hard to be a good restaurant, but even harder to be a good restaurant whose management team and staff try to improve their service every day. So, I am reversing my review. Terlingua has been a favorite restaurant of ours since we moved to Portland in 2018 and despite our recent experience, it will remain at the top of our list.

Delicious BBQ, extensive drink menu including many N.A. options. The backyard seating is ample and spaced out to where it feels like a private dining experience. We did have a bit of a hiccup with the time when we were seated to when our server arrived (about 15 mins) — seemed like a slight communication breakdown between host & servers. Once we had a server we were well attended. Would definitely dine here again.

We tried to go there on a Monday night, should be the slowest day of the week. Had a 1 hr 20 min wait. After all the good reviews we decided to wait and just walk around town. After waiting all that time, we are sat on their really nice patio area, and try to order some BBQ boards. The waiter says they’ve been sold out. How do you go to a BBQ joint, and not have BBQ?? Tacos are extremely expensive and the only real other option, but 2 for $19. Why not tell us BEFORE we waited over an hour that you’re sold out of the most obvious food for your restaurant? We ended up leaving somewhere else but it was very late by that point. Disappointed.

Best BBQ in Portland hands down! Considering what a decent meal costs in this city, it’s a great deal too. Got a four meat platter for $36 with prime brisket, pulled pork shoulder, ribs, and Texas hot links. Great sides and solid drink selection. The outdoor seating is awesome and consists of multiple levels and terraces. Definitely worth checking out if you haven’t yet!

It was just ok. The pickled veggies and the cornbread were the stars of the meal. It took 45 minutes to get our food which came out lukewarm. The pork was good but the brisket and sausage as well as the burnt ends were 90% fat. Our waiter seemed to be in a lost and confused state of mind. It wasn't anything amazing. Just an average meal.

The shrimp special came with both a head and legs, which was not described when it was ordered. Came as an unpleasant surprise. My spouse tried to eat it if I could barely look at the creature. The green chili was flavorful but could use a little more spice/heat. Service and atmosphere casual and comfortable.
