Sandra, the proper taco salad is as follows: Spinach, spring mixed, mixed seasoned beans, corn salsa, black beans, fresh pico when seasonally available otherwise salsa, Southwest sauce, crispy tortillas and green onions.

Lois sounds like a nice, sweet lady of a certain age. Fun fact, she's not. She's sassy, with all sorts of attitude, she brings the heat and doesn't apologize for it. Kinda like the naughty librarian. "Spike is SPICY! Some people like the heat. Maybe it brings back fond memories of a warm summer day? Maybe they are just the type who enjoy a little bit of pain? Either way we have a nacho just for these individuals. Corn tortilla chips, shredded romaine and pepper jack queso are pretty standard and nothing to worry about. But then we turn it up a bit with ancho chile chicken, cayenne aioli, avocado salsa, pickled jalapenos, our house blend of pepper seasoning, black beans, queso fresco and pickled red onions. ""Sophia"" meat is a great substitution for those who refrain from animal proteins, or just want to try something snappy."

This is the best place for original tacos in Midland. They could serve regular tacos but that's too easy. If you want a culinary taste experience that will surprise you and not disappoint, try 2 or 3 different tacos here.

Spontaneous first visit to Proper Taco with my girlfriend today and it absolutely lived up to the hype. The owner took our order, helped walk us through the menu, cracked jokes, and made the whole experience super easy and welcoming. Food came out lightning fast, and every bite was incredible. I ordered some top-level spicy food and they nailed the heat perfectly. The tacos hooked me instantly. Only complaint is that it’s not closer to my house because I’ll definitely be back...
