I live in the New Orleans metro area and know many Japanese restaurants here, and I've also had Japanese in many places on the west coast, where the standards are very high (my first Japanese meal there was over 50 years ago, before many Americans ever dared to try Sushi/Sashimi) because, well, lots of Japanese residents, business people, etc. who demand and know the real deal.
