Exploring Starkville a bit and one of the few places open on Friday evening, on an Easter weekend, was Proof Bakery. Checking it out was a must! So glad we did! The baked good are tasty, and the owner is an amazing person! You can buy in store or order online with curbside pickup!Parking: Street parking and parking behind the bakery.

Love Proof Bakery! The use of unbleached flour at this bakery makes you feel so much better after indulging. TJ is a true artist and her bakery quality is outstanding.

The blueberry Brie tart is to die for!!! It was absolutely delicious. I got a croissant for my friend and it was massive!! I will definitely be back!

Food is expensive and not very good. We spent 50 for 4 pastries and mine was burned black on the bottom. Will not recommend to go back.

We were in town and waking along Main Street and saw Proof Bakery. We walked and this was a great dining experience. The lady working the front counter was very knowledgeable, friendly and made us feel very welcome and not rushed. The outstanding service was equal to the outstanding food. We started with a pain au chocolat and coffee while waiting for our Hammie and a bacon, egg and cheese croissant. Everything was delicious. Great vide with lots of people getting go orders and dining it. We recommend you try it out.

I ordered a traditional croissant assuming it’s going to be delicious for the price they claim. The croissant was burnt and very cold. The person who took my order was rude. Really expected them to be nicer like before. It used to be so delicious and welcoming. I was very excited to try the homemade cream cheese but the quantity was so less, for more than a dollar, it barely sufficed one fourth or less of one side of my bagel which I also bought from them. It used to be a wonderful place. I hope they get better again.

Visiting our niece at MSU we discovered Proof. As a working baker in Virginia, I had to stop in. I was so glad I did. Entering the shop is walking into TJ's (the owner and baker) kitchen. Every inch of the shop and the bakery drips with a passion for baking. We bought croissants and a strawberry cronut. At first, they seemed a bit expensive, but they are the biggest I have ever eaten. We were able to share amongst 4 people and have some left over. They tasted buttery and delicious. The pictures don't do justice to how flaky and crisp they were.I'm looking forward to visiting again and will supply our niece with Christmas gift cards. Rock on TJ! Keep baking with passion.

Are you obsessed with quaint European style bakeries and patisseries? Do you enjoy real chocolate (not the uber sweet ones you get in your regular grocery stores)? Do you appreciate subtlety in taste? If you answered yes to any of the questions above then look no further than Proof Bakery in the heart of Downtown Starkville. This place is like a tiny slice of heaven in a stressful university town. Once you are there, indulge yourself in their wide selection of croissants, cronuts or eclairs. If you are in the mood for something savory, try out their variety of bagels and sandwiches. In conclusion, if you are in Starkville, don't miss out on this rare gem.

I've wanted to check out Proof for quite sometime. So, today after a doctor's appointment, I decided to stop in for a sweet pick me up. I ordered a Hammie and a slice of the Braided Blueberry Cardamom Croissant Danish. I was hopefule these items will cheer me and maybe make me a bit nostalgic for the time I lived in Switzerland and great pastry shops were aplenty. The attendant rang me up... $14.74! And that was with 20% off the Hammie. I thought, this is going to be an amazing party for my mouth and other senses...Not so much. The Hammie was good; flaky and a nice texture. While I wasn't expecting this savory pastry to do my laundry, for the price, I expected it to be more than just average. The Blueberry Cardamom danish was good but, anything with blueberries is at least good in my book.; they're my favorite. It didn't WOW me. An upper layer of this croissant/danish hybrid was just shy of done and the bottom, outside layer was slightly burnt.I can't say I'd be willing to try Proof again. The items I tried were okay. Certainly not worth the price, in my opinion.

Let me start off my saying that everything I’ve tried tastes amazing. However, every time I’ve gone to Proof it has taken way too long to get my order. Today, there were two people in front of me, and it took 45 minutes for me to get my 2 croissants. Not to mention- the worker had to ask what my order was multiple times AFTER I paid. Also, the boxes I was handed were sticky…

Stopped by here on a morning walk through downtown and got a breakfast bagel. Proof is without a doubt one of the best breakfast places in town.

Went into this bakery to order food, was never acknowledged and didn't see anything I really wanted to try. Opted to go down the street to a diner. I do have to say, the placed smelled divine.

Proof is a wonderful bakery! It's so cozy, and everything that I've tried has been delicious. Their croissants are even better than the ones that I've had in Paris bakeries!! Proof bakery is definitely worth a stop or two :)
