We travel from Ky to Billings for work and often stop in Bozeman. My hubby is Gluten sensitive but found he can eat Beignets at the Squire House. Michael, the manager there directed us to Aurore’s where is gets the dough. We ate there with no problems!! We bought a Kg of T80 weighted flour important from France . Excellent bakery, too many choices, highest quality and friendly service, using French flour and butter means there's no pesticides and a better, more rich texture, I've been there twice now and always try a few different things, delicious desert that you can't find elsewhere.
