There are not many steak houses in Asheville (Ruths Chris) and The Proper does a decent job on the offerings both Steaks and Non-Steak eater items. Many items are cooked over a Gaucho Wood Fired Stove offering good smoke flavor. There are many smoked flavored sides and its a first for me having an excellent smokey steak tartar. We had the mixed green salad and the grilled romaine. The mixed green lettuce tasted like it was just picked. We shared a steak. Cooked perfectly and delicious. Definitely give Proper a try.
Front of house needs to be better organized. Our waiter was also the only bartender, so there were very long gaps when we received no service. There were way too many runners and expo who did a lot of standing around and refilling waters. Should move some to waiters to better serve the diners. Example, I waited 20 minutes to receive a glass of wine and it took an hour to receive our second course after ordering. The food was amazing, but the customer service was a letdown.
