My first visit yesterday at innovations in dillsboro was quire disappointing. I had the brisket tacos. very pricey for a teaspoon of brisket in each taco.
Not a taco truck I'd recommend. There are plenty if other Mexican places nearby with MUCH better food and prices

This is the 4th time I've eaten here. I work in Dillsboro and have to eat out, so every so often I have come back here in the hopes that it's better. It's more expensive, but it's not better. Literally any other Mexican restaurant is better and cheaper.

I tried the Cactus Mexican Kitchen food truck this afternoon. It is parked in front of BC Outdoors every Thursday. I ordered the Quesadilla with New York strip. It was very good. They also included pineapple pieces and a cup of green sauce. The young lady in the take out window was very friendly.

Nice to have another amazing food truck in our beautiful town. First time trying their food. Their special sauteed mushrooms ? sounded good but wasn't in the food buffet food the week. When they brought out my Cuban they brought me a sample of their mushroom and they were Devine. Anyone who doesn't like mushrooms but enjoys good flavor I would bet would like these. The texture and flavor was perfect. I was going to save half my Cuban for lunch the next day but I couldn't stop eating it. Happy to come back and people watch while eating good food. Kudos ! And the two behind the counter.. genuinely authentic. ?
