I have been traumatized by many many vegetarian recipes in the Triangle and I can say that most restaurants that have a veggie pastry have not mastered controlling the moisture content, and so the dough would be soggy, but this is the first time I have had a veggie pastry that was perfectly balanced with tenderness, flavor, and moisture. Thank you so much! You made lunch great!
