Great Ramen shop in NJ. The food is authentic. The broth is always rich, flavorful and tasty. The egg noodles are cooked just right and have a good consistency. The pork is tender, but the salt level can vary depending on the day, sometimes too salty. The service is fast, consistent and friendly. Santouka is a must-visit if you're ever near the Mitsuwa Marketplace in Edgewater. As a popular chain originally from Japan, they definitely live up to the hype. In my opinion, their broth is easily some of the best you can find - rich, deeply flavorful, and packed with umami. The noodles are always prepared perfectly with just the right amount of chew.

Overall, it was okay. The wait time was very long and not at all worth it for the food. The ramen was kind of good. The broth felt like it lacked salt and had too much oil or umami flavor at the same time. It had some nice spice to it though. The pork chasu was not super tender. I loved the black crunchy mushrooms they added, but that was one of the only toppings. The noodles were great, they had a perfect bite to them. They gave me chopsticks, a soup spoon and a fork, as well...
