Just tried Happy Dayz ice cream in Edison - really good!
Great selection of flavors - traditional American, sorbet, and some Indian flavors as well (and two sugar free!) Friendly service and fun atmosphere! Open late, even on a Wednesday. (Not to mention cheaper than Carvel)
I recommend - go give it a try!

However, there has been disappointment due to the non-availability of pizza during recent visits. Overall, the shop promises and delivers the best ice cream and desserts, and customers will definitely be coming back. Parking at Oak Tree center is abundant.
