Garden State Diner had two listed vegan options, which is better than other establishments at EWR airport. I went with the veggie wrap, which was a good breakfast option.

Currently have a couple of vegan options, both labeled in the menu: a veggie wrap and the happy cow burger. Had the burger, simple but delicious.

It's food in an airport. You get a few things: it's too expensive and it's slightly better quality than I expected. I got 2 of the egg and bacon empanadas and they were like $8 each and weren't clearly listed as an option anywhere other than a piece of laminated paper stuck to the wall behind the counter with a picture of an empanda. The empanadas were better than I expected, but with airport food the bar is low.
