Delicious! Maria and her husband made our meal fresh. While we were waiting the smells were overwhelming my taste buds. The meal arrived and it was even better than anticipated!hot The refried beans had some whole beans, good idea. The tacos asada were freshly grilled. !Thank you, just what we needed to fill our bellies.

Apparently one of the few places open past 9pm around the town. I would not recommend, 40 mins wait for 6 tacos and taste just okay.

Stayed in Carlsbad on a Tuesday night during my trip to the Caverns and needed to find a place to eat at that was open past 9pm. Boy was I glad I chose Maria's. It's a food truck stand with a few picnic tables in front and a full bathroom to the side. When I arrived around 10pm, besides the group leaving, my party was the only one there. There's also another food truck serving Mexican food in that same area. I ordered the carne asada burrito and it was so gooood! The meat had so much flavor and wasn't chewy. There isn't any rice in the burrito which I'm not used to, but given the plentiful meat portions, I was still very full. The salsa in the container was also delicious, even asked for extra. It's spicy though (gave me acid reflux haha). Highly recommend going to Maria's if you're craving Mexican food!! There are times where I want to drive back three hours just for that burrito again

We waited an hour and half before leaving without food because it was 10:30 pm by that time. When we got there, there were about 10 other people waiting for food and not a single person had gotten their order by the time we left.

Maria was so kind! I asked her if she could make a vegetarian taco (which was not on the menu) and she whipped up a delicious combination herself on corn tortillas. Very authentic and great customer service!

I waited 40 minutes before giving up and leaving. The food just never came. It's a food truck! It shouldn't take that long. She appeared to be on the phone for a good chunk of the time and would not give me a refund. All I ordered was two entrees.

Great Mexican food! This food truck is a hidden gem- the food was made to order, fresh, and absolutely delicious. I would never have found this spot without reading the Yelp reviews but it was the perfect dinner after a day of hiking! Friendly and quick service too- clean picnic tables to eat at outside the truck.
