El Paragua Restaurant is a beloved gem that has reopened its doors to serve fantastic food and excellent service. The menu features delicious options like combo fajitas, Carne adovada, and kid taco plates, all worth the price. Guests praise the Carne adovada for being tender, flavorful, and not salty at all. The ambiance is unique, feeling like the 1970s with colored windows and a huge old cottonwood tree growing inside, making it a great stop for families. The bar crowd is friendly and talkative, adding to the welcoming atmosphere. The restaurant prides itself on its well-trained team, ensuring a smooth and enjoyable dining experience, with attentive service noted even without reservations. The staff take pride in their appearance and manners, and the restroom is clean and orderly. El Paragua is recognized for real authentic local New Mexican cuisine, with offerings like the Carne Adovado burrito and traditional tacos made the same way they were before taco shells were invented. While it may not be cheap, guests feel that the experience and quality of food make it worth the price.
