“I moved to Tucumcari from the Midwest nearly 2 months ago. I fell in love with New Mexico after visiting several years ago and vowed to return some day.
Mexican, New Mexican, Asian to Diners. Tucumcari has a nice mix of restaurants to satisfy all palates. I’ve eaten enough Chile Relleno’s to qualify as an expert, but yesterday I was craving something healthier.
Seed To Salad to the rescue!
I’ve heard about their food truck from a coworker, yet had yet to try them out.
My goodness what a find! Their food truck is tucked right off of Route 66. They grow their own greens! Fresh greens in January!
I came for the Fajita Salad (next time!), but opted for tha Cranberry Pecan salad after trying the Grapefruit Probiotic Seltzer. I loved it so much that I finished it while conversing with the owners and then ordered another…the Cranberry Orange Seltzer! They were both laden with fresh citrus, and the Cranberry Seltzer with fresh cranberries. So refreshing! And no high fructose corn syrup.
The salad was amazing! Spring mix studded with whole pecans, craisins, red onion, celery, grape tomatoes, cucumber, tender chicken and shaved Asiago, Parmesan and Romano throughout. The house made raspberry vinaigrette was a nice compliment to the salad.

“Definitely recommend! We had a table of 11, children and adults, and if you've had a group that size you know it means a lot when I say EVERYONE enjoyed their food, from cheese sticks, to pazole. It was amazing! Enchiladas were amazing! Tacos are exactly as I've had in Mexico, fresh and did not disappoint! We didn't order lightly and we were still served in a timely manner and were being checked on often! If you're considering stopping in while traveling DO IT.“
