The crab AOP is a personal favorite.
The atmosphere and the food at Carbone Riviera might be one of the best dining experiences we’ve ever had. We ordered the calamari, Caesar salad, 2lb lobster fettuccine, the lemon cheesecake, and a few different drinks. Everything tasted amazing! I rated service lower because although our server was attentive, we were charged for their focaccia bread (when it was a standard complimentary item). Atmo and Service was tops, although I sat at the bar which tends to get attentive service. I had the double lamb chops here, that I've had before when they were listed on the menu as Colorado Lamb, but unlike before the chops were unusually tough, chewy and without great flavor. That suggests their supplier is no longer elite, which I would expect given the prices. Quite frankly the Australian Lamb that I've had from Costco and cooked at home was equal.

Carbone Riviera offers a ridiculous and unforgettable evening in Las Vegas. The food is phenomenal, with a one-of-a-kind atmosphere featuring water views and untouchable service. The restaurant is super vibe-y, making it the perfect place to celebrate special occasions.
Highlights include the table-side Caesar with perfectly crispy croutons, and a spicy rigatoni that is consistently described as the best, being spicy, creamy, and cooked perfectly al dente. Other praised dishes include a ribeye that melts in the mouth with a nice sear, and a good potato dish. The pistachio cake is a must-get dessert. For those seeking new favorites, the lobster fettuccine was a hit. While some may not care for the tomato bread or fermented veggies, the yellowtail with soy sauce and chili oil is surprisingly good. The tiramisu is noted for its creaminess. Carbone Riviera is a great new addition to the strip, providing an effortlessly luxurious dining experience with fantastic views, especially from the Bellagio waterfront where the fountain show can be seen.
