The food was absolutely delicious. As someone born and raised in Taiwan, I have very high standards for the flavors of my hometown. I originally didn’t have much expectation for a modern Taiwanese restaurant, but the very first dish—the stir-fried pea shoots—was impressive. The lettuce shrimp wraps were also outstanding. Triple treasure noodle soup was great. Shank texture was fantastic (very uniform - maybe sous vide), tendon was inconsistent but there were some good pieces, honeycomb tripe was better at Raku. Wish their regular noodles were a bit thicker (like Gulp), but the bite was good.
