The Bistro has been a very popular breakfast and lunch place in New Paltz for many years. Recently under new ownership, some things have changed. The breakfast and lunch aspect have stayed roughly the same, but they have added a VEGAN VIETNAMESE dinner six days a week. I don’t usually do reviews of places in NewPaltz, and wasn’t planning to, so I did not get pictures, will next time. Great food and make sure you try the bubble tea, probably the best in town!Vegetarian options: The DINNER is all vegan

I have eaten at the Bistro countless times, but had dinner for the first time. We had delicious vegan meals. They served generous portions for a great price. I’m not vegan , but really enjoyed the food and atmosphere. Same space , but different vibe with nice background music and very friendly service.

Went in on a thursday afternoon with my boyfriend.In the restaurant servers took almost 20 mins too come and take our orders and were very noncholant.atompshere is not for me but can be enjoyed as i found it cramped even with a small amount of people. Male Bathroom didnt have a door lock and only had a latch that didnt close door all the way. Lunch came out quick had gotten chicken tenders and my boyfriend gotten chicken and waffles. the food came out not and not how we had ordered it my food came out chewy and rubbery. We had asked make a change too the chicken and waffles asking for no susage gravy and it came out with the susage gravy with ugly plating with lukewarm somewhat cold hashbrowns.i wont be returning is so many better options for food in this small amazing town with better options

We always saw a line out of the door at this restaurant so we decided to try it out. I’m so glad we did because their breakfast menu is so satisfying and well-priced. I had the chicken and waffles which was so delicious and heavy which was perfect when we needed to refuel after hiking around the area. It’s perfect for before or after hikes. Although, the proportions are massive so maybe try the lighter meals if you’re going to go for a hike shortly after. The staff are incredibly kind and frequently check in. This will definitely be our go to eatery after hiking around New Paltz.

Such a hidden gem! We thoroughly enjoyed our breakfast. There were so many options. The chocolate chip pancakes were so good, and the chai latte was so so tasty!!!

Probably my favorite place to get breakfast in the entire western hemisphere. No joke, this place is the greatest ever. Order the chicken n waffles and your week will be made. I swear.

We decided to try brunch here based on the online menu and gluten free options. When we arrived our expectations were heightened by the full house of diners and the vast menu choices. Sadly, that is where our expectations ended. We received our coffee in a timely manner; both were lukewarm and the decaf had no taste. Our wait staff was pleasant and answered questions about menu options. I will mention that we then discovered that there were no spoons on the table and only one place setting. While waiting for close to 30 minutes for our food, we sat at a very small table which was cramped and drafty (it's February). When our food arrived the meals were lukewarm at best. The blueberry pancakes were tasteless, dense, and rubbery. The sausage (a 1/8 inch patty cooked beyond recognition) arrived late. The egg white omelette was cold in the middle and overcooked on the ends; the toast was hard and cold. We will not be returning. If we could give this experience less than 1 star we would!Parking: Parking was a challenge and signs for metered and times were confusing.

We were around the Catskill and decided to check this place out for breakfast as we saw good reviews however the food was very average. I got the huckleberry folic wrap which is one of their popular option, it was ok nothing to rave about, it was very average not much flavor. My fiancé had the pancake and scramble eggs. The pancake was raw not cooked long enough and the egg was bland as well. Turkey bacon wasn’t good either. Their coffee is great though and the waiter was extremely nice which made up for the average food. We will def not return as even the most basic breakfast stuff like we did get was a miss.

If you are coming to New Paltz you must have breakfast here. It is a cornerstorne of the town. Friendly service, unique options, fresh and delicious. The salmon hash and hobo skillets are my favorite, but check out the specials for sure.

While the new decorum is somewhat lacking, this is one of the tastiest spots in New Paltz: with the Sunrise sandwich offering sufficient calories, and tasty combustions of ham-laced flavor, at a premium.

I haven’t been to every college town, but I’ve been to a lot. The Bistro is THE BEST college town breakfast restaurant I’ve ever found- an encyclopedic menu of imaginative breakfast and lunch dishes perfectly prepared, and served by THE BEST STAFF we’ve ever met! On top of that, we found our first two art acquisitions on the walls of The Bistro, where there is a full time art exhibition- it’s like a Soho Gallery with great food! We LOVE it, and you will too!
