Overall dining at Per Se was a bitter sweet experience - while some of the components of the evening were extraordinary, there were other components that were very lack luster/wasteful. Per Se seems to have one target audience - guests who are willing to over-indulge beyond reason. The quality, techinique and ingenuity of the food itself is amazing - but the lack of coherent food story, menu options and comfortable seating, paired with high prices, are what labels this overall...
I write this recognising that Per Se is first and foremost a business. It has to find a market and service that market which by our experience it does most successfully. The service was impeccable if a little austere at times and the location was impressive - though the lobby took subdued lighting to an extreme which bordered on the impracticable. \nThe food was of a high quality with some interesting combinations of flavour.
