The 3.5-hour tasting menu focuses on traditional Korean fermentation, offering an educational and enjoyable evening. Dishes like the Doenjang + Tofu, Gochujang + Hwe, and Ssamjang + Beef are presented with stories, creating an intimate and engaging atmosphere for the eight guests.
Highlights include perfectly prepared hwe and a taste of 125-year-old soy sauce. The food resembles K-Town fare, but Meju's focus on natural fermentation techniques differentiates it, offering potential health benefits. Standout dishes like the beef with ssamjang and the hwe with gochujang showcase Chef Kim's artistry. His passion for fermentation shines through as he explains each "jang" and the science behind it.
Reservations can be challenging, but the restaurant's communication is excellent, and the speakeasy-style location enhances the anticipation.
