1907 Barbecue serves top-notch Texas-style BBQ in a food court setting at the Mother Road market. The brisket sliced fatty was fork-tender with great bark and just the right smoke level. The ribs were meaty and fall-off-the-bone, while the pulled pork was juicy and flavorful. The Texas Guts Sausage was a good imitation of a hot gut sausage, although it lacked the signature snap of a natural casing. Sides like Elote and Cheesy Grits were a hit, but the Mac N Cheese fell short. The ambiance may not be ideal for a sit-down meal, but the quality of the barbecue makes up for it. While the sauces were too sweet for some, the BBQ was flavorful enough to enjoy on its own.
