Visited Mother Road Market with my family and stumble across Akira and decided to try them. I got the tonkotsu ramen with pork belly ( added medium spice) and salmon sashimi. The ramen was rich and flavorful. They gave more pork and vegetables than most other ramen place. The salmon was surprisingly good coming from a food court sushi place. It had a creamy fatty texture. Definitely will try again when I can't decide on what to eat at the market.
The tonkotsu broth here at Akira is not as rich and emulsified as the ramen broths I've had in cities like Seattle, Houston, and Boston. It lacks that depth of flavor and savoriness that is prevalent in tonkotsu broths. The egg is indeed not soft boiled with the yolk starting to coagulate. Not really sure the inspiration behind adding edamame to ramen but they did so anyways. They added corn as well which is more acceptable but a little confusing because corn was in there by default....read full review

Man, if you like ramen, I found a new place I love! Located inside the Mother Road Market, service was so friendly and helpful!I ordered the miso ramen with chicken, and let me tell you, they piled lots of the chicken in that bowl! And it’s REAL chicken. Not frozen and reheated! It’s so much food you could technically share it. I also had them make it spicy! It really hit the spot! If I could give them more stars I would. ⭐️ ⭐️⭐️⭐️⭐️⭐️⭐️⭐️8/10!
