Hanafubiki | Aomori, Japan 15.8% | 720mL Hachinohe Brewery prioritizes using organic rice and yeast sourced from Aomori prefecture. The Mutsu Hassen 'Black' is distinct; aromatics are intense and diverse with dual notes of passionfruit and earl grey tea, accompanied by floral and herbal tones.
Sanzen 'Omachi' | Junmai Daiginjō
Omachi | Okayama, Japan 16.5% | 720mL The skillset to make sake from Omachi rice is high; but the reward is an exceptionally balanced beverage with strong soy sauce undertones and complex fruit aromatics. In this Junmai Daiginjō, we see orange and grapefruit rind, cantaloupe, and fresh mint.
Masumi 'Hiyaoroshi' | Yamahai Junmai Ginjō
Yamada Nishiki, Miyama Nishiki, Hitogokochi | Chubu, Japan 15.5% | 720mL Miyasaki Brewery is devoted to making seasonal sakes, as well as sake that is good with food. For this reason, we see a lot of Yamahai methods examples. "Hiyaoroshi" tastes of stewed mushrooms, savoury herbs, and subtle notes of baked apple followed by minerality that allows it to be excellent with fish.

Champagne
MV Jacquesson 'Cuvée 744', Extra Brut | Champagne
45% Chardonnay, 35% Pinot Noir, 20% Meunier| Vallée de la Marne, Champagne, France 12.0% | 750mL The "744" comes from 2016, and is sourced from Aÿ, Dizy, and Hautvillers (55%), with the remaining from Avize and Oiry. While the blend mainly consists of the 2016 harvest (which was excellent for Pinot Noir), the rest of the assemblage coming from the previous 700s. It is crisp, austere, and led by minerality that has the potential to develop over time or with decanting.

White Wine
2019 Giacommeli "Boboli" | Colli di Luni DOC
95% Vermentino, 5% Malvasia | Liguria, Italy Dry | 13.5% ABV | 750mL This wine is named for the "Boboli" vineyard, which features vines planted in 1913. It is bright, citrus-driven with notes of grapefruit, mint, white pepper, and elderflower.
2019 Domaine Pinon "Silex Noir" | Vouvray
Chenin Blanc | Vouvray, Touraine, Loire Valley 13.5% | 750mL Domaine Pinon's 'Silex Noir' is named after the tuffeau soil from which the grapes are sourced. The wine is refreshing, viscous thanks to the grape, with subtle notes of almond skin.

2019 Domaine Serol "Eclats des Granite" | Côte Roannaise AOP
100% Gamay | Loire Valley, France Dry | 12.5% ABV | 750mL Côte Roannaise, though technically part of the Loire Valley, is located just west of Beaujolais. This light, fruit-forward wine tastes of perfectly ripe strawberries, raspberries, and sour cherry.
2012 Musella | Amarone della Valpolicella 'Riserva'
Corvina Blend | Amarone, Veneto, Italy 14.5% | 750mL Full bodied and broadly structured showing intense concentration of fruit laced with spice, chocolate and orange zest. Elegant tannins and fresh acidity stay focused through to a long luscious finish.

Rosé Wine
2020 Pardevalles "Prieto Picudo Rosado", Spain
Prieto Picudo | Tierra de Léon, Castilla y Léon, Spain 13.5% | 750mL Rosé made from a rare and native grape, Prieto Picudo, that was revived by Pardevalles. This is a thick-skinned grape, so the wine is deeper in colour, dry, and well structured with exotic fruit and is intensely floral.

I am lucky to have another chance to dine here again and it was as excellent as my previous experience. Every bite is delightful and visually stunning. I recommend it for a very special occasion.

High quality service, great kaiseki experience. There's some French influence to their kaiseki but still traditional Japanese kaiseki dinner.

On the higher end for tasting menu, you get exceptional service to go along with it.
The staff are all very knowledgeable and sitting at the counter you get to see the kitchen staff do their craft.

Worth noting that tea is on the expensive side, starting at $40, but the pot and cup will...

Aburi Hana transported us through an unexpected culinary experience. I am happy to say, they did not disappoint, they have now become our favourite Michelin star restaurant in all of Toronto. Carefully thought out dishes with exquisite taste took us away from our daily life into a divine adventure. The service was as perfect as you could imagine. The Sake pairing was an amazing touch and explained to a point of excellence. I will be looking forward to our return. Thank you Chef...
