Volo Bianco '23 (1L)
Orange Wine. Collaboration with Rosewood Winery in Niagara. The 2023 Volo Bianco is a blend of Gewürztraminer(90%) and Riesling (10%).Thiswine is an "orange wine" meaning we fermented these two white grapes on its skins. After fermentation we separated the free run wine from it's skins and pressed the skins, we blended half of this press wine back into the free run, to achieve complexity and balance. After blending this wine was racked, clarified, cold settled and bottled, unfined and unfiltered. 12%
Volo Rosato '23 (1L)
Rosé Wine. Collaboration with Rosewood Winery in Niagara. This wine is made from 100% Syrah. This Rose is made by "saignée" method. What this means is that we pulled juice from a tank of Syrah that was starting to ferment for red wine production. This process yields its beautiful red hue and complex aromatics. This wine was made 100% in stainless steel, racked, clarified, cold settled and bottled, unfined and unfiltered. 12% alc/vol
Volo Rosso '22 (1L)
Red Wine. Collaboration with Rosewood Winery in Niagara. This wine is made from 50% Cabernet Franc and 50% Cabernet Sauvignon. This wine was fermented together in tank, 100% de-stemmed fruit. After fermentation this wine wasseparated from its free run wine and the skins were pressed. This wine is a blend of the pressed wine and free run wine. This wine was racked, clarified and bottled, unfined and unfiltered.

Bar Volo is a great little spot that feels tucked away from the busy streets. It’s the perfect place to catch up with a friend over a few really great pints and actually hear each other talk. The beer selection is always top notch and there’s usually something new or interesting to try. The food is also genuinely tasty and pairs well with the beer. Easygoing vibe, good conversation, and solid eats. Definitely a place I keep coming back to.

Bar Volo is my absolute number one favourite place especially in the summer. I love their beers, and the food is always amazing. The atmosphere is great, the vibe is great, and it’s the perfect spot to hang out, relax, and enjoy something delicious. Always a fantastic experience!

A wonderfully comfortable craft-beer haven. The decor and vibe are comfortable and pleasant. The service is friendly, super quick, and knowledgeable.

But most of all, the selection is excellent. The Volo-branded beers are a good quality and the rotating taps included some of the best breweries in the world. I will almost certainly be found at this bar any time I'm in Toronto.
