I ordered a single 8” cheese pizza. I had high hopes for the pizza given how I could watch the staff hand-spinning the dough into nice thin crusts as they made pizzas. However, it took 40 minutes before my single pizza was done. The pizza was okay but wasn’t anything special, especially given the 40-minute wait.
If you’re looking for authentic Chicago style thin crust pizza in Portland Oregon, let me recommend PROOF PNW. They recently opened a place in SE; tried it for the first time tonight and it’s legit! Crust, cheese, and toppings were all spot on. Closest I’ve come in PDX to finding the pizza I grew up with back in Chicago!
I 1000% recommend this place. My husband and I are chicago natives and when we heard about a chicago style pizza we had to come out and try it. Let me tell you, this place did not disappoint. By far the best pizza we had since we moved out here. We ordered a sausage with mushrooms pizza, chef kiss. Proof pizza definitely gain loyal chicagoans customers.
