OMG! I'm still licking my lips and figuring out when I can go back. Chicken bahn mi. Bread perfectly soft inside and crusty outside (but not in the way the rips up your mouth). Sauces are amazing and fit perfectly with the sandwich. Chicken full of flavor. Loads of adorable tiny shredded carrots. They offer beef and tofu and as a bowl too.
Update. Went back and had the tofu bahn mi. I like the chicken better but if I had to eat that tofu bahn mi everyday for the rest of my life...that would be a life well lived. I'd love to try the salad, or noodles or rice version but it's hard to pass up that bread.

These is my favorite spot to get a banh mi. I rarely make it out there, but when I'm on that side of town, I always pick up one up. I always order their chicken banh mi and have never disappointed. Highly Recommend

My favorite food truck in Bend. My only regret is that it’s not open more days and longer hours. Love the chicken bahn mi sandwiches. Take it across the parking lot to eat inside the brewery tasting room if it’s a super hot afternoon. Otherwise, you can walk deeper into the far end of the parking lot and enter a grassy area with facilities for picnics (but the restaurant beepers don’t work that far away, so wait until you have your food first.)

Great bahn mi, stacked with fresh veggies and the arrangement really showed they cared about their product. Price was reasonable for Bend. I selfishly want them to stay open later (and think it would be good for profits) but also respect the owners for prioritizing their lives.
