Amazing sushi. Probably the best in Bend.

I've been here a handful of times and really enjoy it. The food is always great, the staff are super friendly, and the atmosphere is always nice. They can get quite busy here. Like standing while you wait. But it is very much worth it. Prices aren't bad. However they can get up there when you let your stomach do the ordering.
If you haven't tried Shinsei Sushi yet, I would recommend you give it a try.

My husband and I LOVE this place. We come here often for our date nights and the food is always delicious and the service is awesome. The parking is a little tricky but we always figure it out.
We went tonight (7/31/24) for our anniversary and of course the food and cocktails were delicious but our waitress, Reese, was AWESOME! She was SO kind and bubbly and made conversation with us throughout our whole evening there. She made the whole experience a lot of fun overall.
We definitely recommend this place.

As someone who appreciates good sushi this place is as good as most places I’ve tried all over the US. Jeremy was an excellent waiter. I went with an eagle eye roll and it was amazing Jeremy said it is one of his favorites. So get that! We also got golden California roll, nigiri tobiko and a spicy prawn roll and sun river roll. All awesome choices. Fast and great pricing. Was going to go to chi but the pricing jump is huge for the same rolls. Will still try chi but this place is my go to in bend for sure.

So the service here was amazing and the atmosphere is absolutely beautiful, however... the sushi was very subpar... which is weird for me to say. There was no seasoning to the rice (most sushi rice has a seasoning to it) it was bland and flavorless. The imitation crab they used was very low quality and had a powdery texture. There were maybe two rolls that had cream cheese in it and cream cheese is a great ingredient to add to rolls with salmon in it but there was hardly any on the menu. I'd go back to maybe try the Korean Ramen, but I won't go back for sushi.
To preface... my husband and I make our own sushi at home and we have been to many sushi restaurants, even conveyor belt sushi, that was better than this.

In my best opinion this is the best place in bend for sushi they have had a lot of trile by fire over the 3 and half years I have been taking my wife the biggest problem they they have overcome was cutting size and packing the consistency was nun but after several attempts to help they had to learn on there own.Everyone will have a different experience I have been going to shinsei since it opened and it's not ways absolutely amazing but most of the time it is you can't be to pickie when there aren't to many sushi restaurants in bend currentlyI will always go back tell I get food poisoning then your black listed...don't ever assume that your customer need you to tell them how to eat sushi unless they ask and assuming the customer doesn't understand What soy sauce is and how one is low sodium It's completely unnecessary and kind of unprofessional, Assume is always bad!

The food here used to be better. We came for a late lunch around 3pm and got tempura for appetizer which was OK. We ordered 4 rolls; Cali, sunriver, spicy tuna and rainbow. The fish all had a dry/brown tinge to it. The taste was still OK but the meat was dry and did not loom fresh. I fish for yellowfin(among other offshore fish) a couple of times a year and am aware of what a quality piece of sushi should look and feel like, this was low grade quality at presentation. The rice was also very dry. It came out extremely fast(under 5 minutes) and it seemed as though the rolls were premade and in the fridge, not acceptable for any reputable sushi restaurant. Our server was friendly and the restaurant was not busy so the atmosphere was nice. This will likely be my last visit to Shinsei.
