I have been writing about the Italian culture, history and food for many years, and have been making all sorts of pizza styles for two decades--I highly recommend Trios. I've been critical of Trenton style tomato pies in the past... usually covered with overpowering, acidic, cheap tomato sauce and barely a dusting of "parmesan" cheese. Trios Tomato Pie offers a variety of thin-crust pizzas, baked on a screen or in a pan, with a range of white pizza options. Their round pizzas are crispy and flavorful, and the square pizza is bigger. The Longobardi with Mozzarella | sausage | provolone | long hots | roasted red peppers | caramelized onions has a surprising sweet but good flavor. The spicy Cajun wings are OK, with flats better than drums. The potato wedges are fully cooked but lack flavor. The craft salad is good, and the salads are super. Service is great, and prices are good. Despite some inconsistencies, the toppings are a highlight.
