Chewy, light and locally sourced, the bagel sandwich, with a perfect crunch from the gold-standard fried egg and crisp bacon, isn’t greasy or heavy but still packs incredible flavor. I got it on the everything bagel, and I might add some more cheese if I want it extra gooey next time, but it’s probably the proper amount.
