Taco Prime Cordova

Taco Prime Cordova is a restaurant located next to a coffee place. The loaded guac and tortilla chips are super fresh. The tacos are very bang for the buck, loaded and just $4/5. Ordering is at the table and everything is brought to guests. The inside is very bright and cool, nice for hot summers. The place is still busy but has an organized system and it doesn't take too long. The tacos are filling. The corn is a whole cob. The chicken tacos are enjoyable. The green sauce is mild and really good. The orange is hot and they definitely mean hot, so use with caution. The staff are friendly and thorough. The food is good and feels like a home cooked meal. The green salsa is a favorite and makes the food taste even better. The chicken quesadillas, chicken burritos with no pico, chicken bowl, churros with ice cream, and horchata are all delicious. The flavor is sometimes on the tamer side but still good. The place is very clean and the decor is fun, especially the cute pun on the wall. The owner is the friendliest person. The tacos with corn tortillas should be doubled to help with falling apart. The Loaded Queso, Birria Taco, Chile Taco, Ribeye Taco, and Picaña Taco are all good. The queso has great flavor from the chorizo and pico, although a little thinner and more watery than preferred. The chips are crisp and sturdy enough to handle it. The Chile Taco is the favorite. The roasted jalapeño, melted cheese, steak, and pickled red onion give it the best mix of heat, richness, and acidity. The Picaña Taco is another standout because the meat is exceptionally tender and comes with plenty of guacamole, cilantro, and pickled onion. The Ribeye Taco is also generously filled and flavorful. The Birria Taco is very rich and a little heavier than usual, but still enjoyed. The shredded beef is tender, the cheese works well with it, and the consommé adds even more flavor. Everything leans slightly salty, but not enough to take away from the meal. Service is fast and genuinely friendly. The order comes out quickly and the whole visit feels easy. The Chile Taco is the clear favorite, the picaña is impressively tender, and even the richer items are well executed. The ribeye taco and the top sirloin taco are really delicious. The tortilla chips are homemade and the cheese dip is delicious. Taco Prime is definitely competing with Taco n Ganas. 100% recommend having the fried cheese added to your tortilla. The chicken bowl has really fresh ingredients. The trick is to add one green sauce and one red sauce to the bowl and shake it up. The staff are great.
