the Jim Nachos are chicken nachos, which is what I wanted when I worked there many years ago. I asked the cooks if they could use chicken instead of beef. The management at the time thought it would be a good idea To have both. So they named the chicken nachos after me; thus "Jim Nachos"
They are still on the menu today, some 30 years later.
