A completely different interpretation of the variety. Full of lemon zest, orange liqueur, yellow apple and red grapefruit. The citrus base is upgraded with tones of hay, St. John's wort oil and a sweet note of homemade biscuit. We took the bowl of nashi pears & green apples that were the core of the wine and added a touch more white nectarine, frangipani and a whiff of grassy freshness. Ponente 270 Libeccio 225 is a sparkling red wine produced by Podere Cipolla Winery vinified with a blend of different Lambrusco grape varieties (Graparossa, Sorbara, Salamino, Maestri, Montericco) 75% and 15% Malbo Gentile. Bandini Malbec Dos Cauces

This Spanish red is 80% Bobal (from 60-year-old vines) and 20% Malbec and Monastrell (from 15-year-old vines). Bobal is a dark-skinned wine-grape variety native to Utiel-Requena in southeast Spain. Despite its relative obscurity, it is one of that country's most-planted grape varieties behind Tempranillo and Airen.The wine was fermented in stainless steel using all-natural yeasts, and then aged eight months in French oak. The high-altitude grapes produce a wine with a nose redolent of red fruits, generous blackberry and dried-cherry flavors, and good acidity.

Finca Resalso is the name of a historical vineyard which was planted in 1932, the year in which Emilio Moro was born. Finca Resalso is also the name we have given to their wine which is made from grapes from their youngest vines. Cherry red color with a violet rim typical of its youth. In the nose it is expressive and intense where the primary aromas of Tempranillo of red berry fruit stand out and are clearly perceived. In the mouth it is balanced and well-structured, with a pleasant aftertaste.

Robert Sinskey Vineyards Vin Gris of Pinot Noir
The grapes are hand-harvested at night, delivered to the cellar door in the wee hours of the morning where they are delicately whole-cluster pressed and the pure juice is cold-fermented to preserve the layered fresh fruit, mineral and spice characteristics of the finished wine. Purely delicious!

The fruit for the Jolie-Ladie Trousseau Gris comes from the Farnucchi-Wood Road Vineyard which is planted with near-extinct Recherché vines. These vines produce unique yet fascinating fruit. In turn, the wines made from them are equally beguiling. The wine sees some time on the skins adding to the nice texture and was foot stomped. Medium acidity and body. Ordered this cheese as a gift for a friend and she was so sweet and shared it! It came shipped in an insulated box with two ice packs and was still very cold when it arrived. The cheese was just delicious and it seemed like we all had different favorites! Top quality would totally buy again! It is also sold in a local natural food co-op near me in CA!

I have wanted to try Rebel Cheese for so long! We are on a road trip and one of our stops is Austin. Oh my goodness this place rocks! I got the Bacon Brie Me and it was sooooo good! We dug in and never stopped to take a picture.

I visited the Rebel Cheese shop in Austin while there on business. The staff was friendly and helpful. I ordered the Save A Chicken, Ride A Pimento sandwich and carrot cake slice to go. The sandwich was delicious. The chicken was just a faux meat patty, but the pimento cheese was amazing. It definitely set this sandwich apart from others I have tried during my travels.
