I’ve been sitting on this review for a while. I’m definitely not one to tarnish any 5 star ratings!! My experience was mixed. In part by the fact that I’ve spent countless moments at midnight trying to get reservations with no luck. When I finally snagged my first res, I was shocked to be sitting next to a guy that had been multiple times (even in the past week). Most of the others also had the good fortune to be “frequent patrons”. There was one other person who said she’d been trying to grab a reservation for a while. TBH, really didn’t sit right with me.As we all know, these reviews are opinion based only. I can only give my honest assessment of my experience.The vibe seemed catered to a younger crowd for sure. I definitely felt out of place. The “F” word was used quite liberally by the staff. No big deal, just kind of off pudding when you’re paying so much. Again, I realize this may not be a popular opinion. Unfortunately we also got on the topic of church camp and “those types” which stung quite a bit since I have a strong faith base. Not really the fault of the staff but she was very much in agreement to the conversation. I am not suggesting that the chef participated in any of these convos because he didn’t.Yes, the food and drinks were absolutely delicious. I got the extra cocktail menu where we get a fun drink paired with some of the courses and also participated in the extra course which was way too fishy and slimy for me. All in all, my bill was slightly over $400. Since I just didn’t have the best experience, needless to say, it was too expensive for me.My biggest suggestion would be to not go solo.Parking: Very difficult to find.

Chef Saine provided an amazing experience! Food was fresh and had interesting stories around it.Seating was intimate and the concept is to provide a very interactive experience between the staff as well as between guests.A pre dinner cocktail or mocktail was provided for guests to get to know one another as well.The scallop with a salsa verde was the star for me! Chef mentioned it was a pretty popular dish so likely to be on the menu.

Best omakase experience in Austin and it's not even close. If you've ever experienced omakase in Japan, it's very similar where the chef prepares everything in front of you. The difference here is that rather that the atmosphere is very social and upbeat versus this silent, zen-like feeling of traditional omakase. Everything was extremely delicious and the staff were experts in their craft. Looking forward to my next visit!

Amazing experience. 10/10 sushi and the chef is really friendly. The drinks are amazing and overall it's a wonderful experience. Only thing I don't recommend is doing the optional add on dishes at the end - it was meant to be $300 for 14 plates each which is fair for 2 of us with the flat rate. But it somehow ended up a $700 with one of us getting the 4 additional plates and the other getting 2 additional. That's the only reason for it being 4 instead of 5 stars. Besides that huge jump not making sense to me I'd definitely recommend this place for a date night!

I had been unlucky snagging rezzys here since they first opened and I was tired of losing sleep on the midnight drop. They switched the times to the morning so I figured I would try again and I finally got lucky and snagged some! We went back in August at their new Perish location. The whole experience exceeded my expectations. I was a little worried about parking upon arrival after reading some negative reviews about Pershing if you are not a member, but thankfully the gate guard was very polite, and it's gated parking so your vehicle is safe. Once you are seated with the others in the lobby, the amazing bartender does a meet and greet game with everyone along with your first alcohol sampler that was very unique and tasty. Once you are seated at the bar for dinner, you get a custom coaster with your name on it that's a keepsake, a nice little touch. The chef has a map of where he sources his food which is really neat to see as well. Every bite was unique and delicious, there wasn't a single bite I did not enjoy. I did not do the alcohol pairings and I am so glad I opted out for that because the old fashions were mind-blowing. It was made with Japanese whiskey and A5 wagyu rendered fat that was just dreamy. Pairing that with the A5 Wagyu sushi bite was a match made in heaven. The bone marrow was also one of the best I have had in this city. I had more reservations a couple of weeks ago and gave them to a buddy of mine, who sat next to an F1 driver. You never know if someone famous might be in your group! In the end, the chef played 6 or so songs that we all drunkenly sang along with him too, the cherry on top of a perfect night. Can't wait to come back!Parking: Pershing is a gated parking lot. A gatekeeper will greet you.

6/5 best dining experience of our life. Intimate and close event. Great, amazing, bartender and chefs. Well educated on the cultural background of the food they are preparing, and beautiful presentation. It is expensive, so please expect $135+ per person minimum, and can exceed $400+ quickly with two people and tip!!! Totally worth the money if you're willing to spend it. It's a nice anniversary, birthday, or even single person dining experience. I would do it once every few months due to budget haha, but that's cause I don't make big bucks! Really nice people who engage in conversation so don't feel uncomfy on a solo date. Add yourself onto the waitlist and keep an eye on your email! That's the way I got in.

Just absolutely an experience you can't get anywhere else. Food was incredible. The space and quaint number of people was very cool to be a part of. And again, cannot rave enough about the sushi. Best bites I've ever tasted.

Best fish I've ever eaten. Best oyster. Best steak bite. You name it. This was the most incredible sushi I've had. I've been to Nobu, Uchi, Uchiko. Nothing compares to this and the mix of flavors in every bite. Had the sake pairing which was nice as well. It was pricey! But I felt like I was having a meal that you just can't have anywhere else. Can't wait to go back.

Amazing experience! The food was lovely so much of the fish just melted in your mouth even the sushi rice was amazing, staff are so friendly and great conversationalists
