The Gibson Dallas is a restaurant with nice decor that gives Harlem night vibes with a speakeasy. The ambiance is beautiful and the space will especially shine at night with the lighting and atmosphere. The evening staff provided exceptional customer service with checking in on guest tables every so often, and that attentive atmosphere will keep customers coming back. Some staff members were extremely kind and amazing.

The food had mixed reviews. The Sante Fe Short Rib, snapper, croque madame, and the shoyu sauce on the salmon were great. The ricotta and grapes appetizer, deviled eggs, and the board were very good. The veggie risotto was appreciated as an effort for non-vegan options. However, the burger was good but not especially memorable, and the French toast had one piece burnt completely black. The Caesar salad was a miss because the chicken was very overcooked. The cocktails were creative and the wine selection was good.

Service had issues. Some visits had wrong food orders, slow service, and wait times over an hour. One table had an issue with a staff member sweating profusely. Another visit had a dirty appetizer plate and a dusty banquet shelf. The bill also included an item they were out of. Despite the rough spots, there is a lot of potential, and the restaurant is worth another try.
