The Forks Out- this was our first  dining experience at Vargas cut and catch. There was a little mishap at the beginning of the dining experience as the hostess set us at the wrong table twice and had us move. As the night progressed our waiter Shaddy, was at his best! He thanked us for dining and told us about the membership program recommended the dinner, menu specials and paired wine.  My partner had the steak and I had the Gulf red snapper. Both dishes came out hot, large serving sizes and the presentation was excellent. The weight staff was on point. Let's not forget the dessert which was the bread pudding.... which left us stuffed! I would say this was an all-around great experience ..... we will definitely go back! They actually enforce the dress code which was also key for those looking for the ultimate date night.

This is our usual choice for special events, birthdays, etc. not just when we want a nicer meal. We usual go on the weekdays and I think this is the first weekend we've been there, unsurprising it was more busy and more loud. Food is good as always, a bit annoyed when we ordered our usual after dinner drink, carajillo, only for it to be now made with an orange twist. We should have been told that BEFORE and then either comped the drink, or remake it without the orange, very bad taste combo. For a $550 bill for two people, you can afford to remake that drink. I wish you would tighten up a bit on the dress code. Jeans and tennis shoes should not be allowed during dinner, I don't care how many rhinestones they have on them and I know society is on its way out, but someone shouldn't be allowed in with a visible tattoo sleeve. Is this Vargas Cut and Catch or Number 13?

Vargas service and food are always superb.The staff is professionally trained, and they pay attention to details. The soft jazz music in the background is not too loud but gives the perfect ambiance. Of course, I will be dining here again!

The entire experience, from our initial arrival to exiting the facility, outstanding. All of the staff was very enthusiastic and seemed genuinely excited about our having our 30th anniversary dinner at their business.

From our server, Juan to the manager, Anthony, to the hostess, the service was great. The food was outstanding. We had the tomato appetizer which is not to be missed. The homemade sour dough was excellent. We split the JC skewer...wonderful! The scallops were perfect, shrimp huge, and the lobster was outstanding. The filet was great. Don't miss the poblano corn. Our drinks were cold and perfect. This is a great restaurant in downtown Galveston.
A wonderful first visit to Vargas and it will not be our last! Andre was an excellent waiter/server and took really good care of us all evening. We had the burrata and then split the Vargas cobb salad followed by an off menu special, an 18oz bone in veal chop paired with the cream corn and fried asparagus topped with lump crab meet. We also enjoyed a 2022 Austin Hope Cab, which was a great value! We finished the meal with The Paco Dome for dessert...a must to complete your dining experience! The food was excellent and the service even better! Thank you Vargas for helping us celebrate of 35th wedding anniversary!

The food and staff were stellar! Loved the lobster tail, filet, American Wagyu hanger steak with chimichurri, cheesecake! Cocktails were spot on as well. It was a real treat to celebrate a special occasion here.

Vargas deserves more than 5 stars! The food was superb! The bisque was one of the best I've ever tasted. My husband and I both ordered their steak and lobster special, which was phenomenal. And their whipped potatoes were delicious. The staff were very friendly and attentive. Their level of service and detail creates is perfect, especially when you are seeking a little more elevated dining experience.
