I ordered what appears to be the only vegan main on the menu, Impossible tacos with rice and beans. I confirmed with the server that the black beans and rice are not made with animal products, so as long as you omit the crema/cheese, the meal is vegan. It was a little pricey at about $30, but it was very filling and much better than many of the other options in this section of the airport.
