I got a oatmilk lavender matcha latte.
The matcha was lightly sweetened and had a good strong matcha flavor.
It was 9$ after tip.
Have to go around people sitting to get to the coffee shop desk.

All the staff members are so helpful and polite. Especially lady named latti. She super sweet and all the staff too. I really love the portion and food at the cafe. Just disappointed that cafe payment section didn’t worked but everything is so so good

Toughest barista in the game. She kept taking orders even like being 40 minutes behind and sometimes getting stuff returned but held her head up high even by herself the whole day. Crazy impressed at the fortitude.

I went there for the first time and the barista completely ignored me until I asked for a latte, she looked me up and down and said they don’t serve coffee after like 2 or 3, which I obviously didn’t know 😭 I had even checked Google before going in (it said open). She was SO rude for no reason lol

Assemble Coffee is a hidden gem tucked inside Texican Court. The atmosphere is fantastic—stylish Southwestern design, cozy indoor seating, and a relaxing courtyard patio that makes it easy to linger with a drink. It feels more like a boutique lounge than a typical coffee shop, which makes it a really enjoyable place to spend time.

The baristas are warm and welcoming, and they clearly care about what they serve. My vanilla cold cream cold brew was smooth and refreshing, and the matcha latte I tried on another visit was balanced and not overly sweet. They also carry pastries from local bakeries, which pair nicely with the drinks.

That said, it’s not perfect. The shop is a little tricky to find at first since it’s inside the hotel, and parking can be inconvenient. The menu leans heavily toward espresso drinks, so if you’re hoping for a simple drip coffee, you won’t find it here. Also, while some drinks shine, others can come out a little strong or acidic depending on the barista.

Overall, Assemble Coffee is worth the visit for its atmosphere, friendly staff, and specialty drinks. It’s a great spot if you’re in Irving and want something more unique than a standard chain café.

This place is the cutest and most relaxing little getaway, tucked right in the heart of all the action. The vibe is truly unique charming, peaceful, and full of character. We rode the complimentary bikes to explore Las Colinas, grabbed amazing coffee from the on-site coffee house, and enjoyed breakfast at the restaurant. One of our favorite parts was playing cornhole in the courtyard such a fun touch! Our patio led straight out to that shared space, which made it feel cozy and connected. Every detail felt intentional, and the ambience really set the tone for a memorable stay. The staff was incredibly kind and welcoming, which made the experience even better. We genuinely loved everything about our time here. Highly recommend if you’re looking for something that feels both laid-back and full of charm!

The space here is fantastic. Beautiful venue, amazing patio, and a really cool overall vibe. The staff was incredibly friendly and welcoming, which I really appreciated.

That said, the coffee was a letdown. I got the vanilla cream cold brew and it was so acidic or over-concentrated that it became a challenge to finish. With coffee being the main reason to come here, that knocked the experience down a few notches.

I’d still come back for the atmosphere and maybe try a different drink, but I left a little disappointed. A beautiful spot, just hoping for better balance in the coffee next time.

Nice little spot to have coffee. Really enjoyed the latte. Only downside is parking is a bit confusing as it is behind the building and it doesn't appear that there is a path through.
