Was so excited to try Bills after reading all of the positive reviews.
It was disappointing to say the least.
A complete and utter let down.

Got the three meat plate ( ribs, pulled pork, and brisket.)

The Ribs and pulled pork were tender hut that's where the compliments end. Both meats were severely under seasoned and there was no smoky flavor to be found.
I just don't understand how the ribs could have such a nice red color from the smoke and lack any sort of smoky flavor.

Thought to myself maybe the sauce can save the meat.
Nope!
The sauce tasted like it was having an identity crisis. Wasn't sweet or tangy and the texture was gloopy like a gravy. All it did was provide some moisture.

Potato salad was average tasted like any ol potato salad you can get from Walmart or HEB. Coleslaw again average, tasted like I went to KFC and got a side of slaw from there.

Finally the brisket. What a major letdown. Impressive looking bark on the outside but again lacked seasoning. Both the lean and fatty brisket were dry. How they manage to make fatty meat dry is beyond me.
I've always heard that Texans take their brisket seriously and the brisket here just feels disrespectful.

The atmosphere was okay. Clean and had a lot of local decor in the dining area.

Final thoughts... don't waste your time. If this is the best BBQ in town you're better off going to another town to satisfy your BBQ cravings. What an absolute waste of time and money. What a disappointment.

This place knows how to make the MEATS! The brisket is melt in your mouth brisket. The smoked turkey is flavorful and juicy. There are 3 choices of sides to choose from; potato salad, which was perfect in every way, cole slaw, and pinto beans without meat. The prices are reasonable and the food is scrumptious! If you come hungry, you will leave full. Find a spot to park. You won't regret it! The staff was friendly and helpful. They even give out samples! Bonus!!!

I've had BBQ from all over the States. I have a rule if the building looks old and worn down the the food is good. (This has never failed me at any place I eat). I had the 3 meat plate and got ribs, pulled pork, and brisket. The brisket was done perfectly moist and savory. Ribs were literally falling off the bone as you picked them up from the plate. The pulled pork was unbelievably savory. None of which had an overpowering bark, but we're perfect balance between meat and seasoning added. The home made BBQ sause was not to sweet not to spicy but a perfect balance to go between pork and beef. Their buttermilk pie was exceptional. Service was perfect. Love that when you walk in, it is cafeteria style serving. If you stop in Kerrville, know that you will get some damn good BBQ from this family owned establishment.

Don't miss out on the most delicious brisket in Texas. It was perfectly smoky and seasoned, not stringy or overcooked- just perfection. The staff was friendly and the service was organized and quick. The decor is rustic cowboy and they also have a backyard area. The barbecue sauce and potato salad were also tasty.
Try it, you won't be disappointed.

I recently got a decent size order for our church-Kerrville Global Methodist to serve teachers at one of the schools here for teacher appreciation. The service was incredible and the bbq was nothing short of amazing. Best brisket I've ever had.

Had my very first brisket sandwhich today. Born and raised in kerr and today's my first time going in. I love the atmosphere, very homey and everyone is so nice. Thank you so much for welcoming me in and hooking me up with yummy sandwhich! 10/10 would recommend to everyone!

Did a dinner take-out from Bill’s BBQ…this place has been around for over 40 years and is a local favorite. I went with the 3-meat sampler dish with chicken, pulled pork, and brisket with beans and potato salad as the sides. Overall…the meal was OK. The chicken was good, the pulled pork had nice flavor, and the brisket was just OK, not much bark or flavor. I enjoyed the potato salad but wasn’t a big fan of the beans.

Slap yo mama and butter my biscuit BILL'S BBQ is quite possibly the best I've ever had in this fine State of Texas! Brisket melts in your mouth, so flavorful. Potato salad is Devine, beans are good. Worth every penny spent. Highly recommended if you like BBQ it's a must not miss!
