Firstly, My server was a handsome young man named Blas. Very attentive, very funny, very smart. He was chromed out in his chrome heart glasses, very stylish. Even though he was my server, other servers would check on my tables as well, such as a waitress named Aliah. She was gorgeous and sweet and she should dye her hair purple. Before I left I went to go order at the bar and the barista Jolie, was warm and friendly and I loved talking to her as I waited for my coffee. And lastly, the very gorgeous hostess was very welcoming and genuinely seemed to like her job and made small talk with me and my family, making me feel that I was genuinely welcomed and not just another customer. My new favorite restaurant.

The only redeeming thing about this place is the atmosphere, and even that isn't so great. The food is overpriced garbage, and the staff is a merry-go-round of new faces. No one ever sticks around, wonder why. Anyway, if you like to get ripped off, look forward to hating your meal and leaving hungry, come here.

Hard to choose what I enjoyed most—the croissant, macaroons, or muffins. All of them, absolutely delicious. And great coffee too! Love this place.

Writing this review while I’m still inside the restaurant. Ordered the eggs Benedict and honestly a McDonald’s McGriddle would have been better. No flavor, small portions, and low quality ingredients. The restroom looks like a gas station bathroom.
The pastries were dry and stale. Do not fall for the glitz and glam. HEB has better pastries.

Today I came in for breakfast at Maison Stivalet, and from the moment I walked through the door, I felt genuinely welcomed. I was acknowledged almost immediately with a warm and friendly greeting, which really set the tone for the entire experience. The staff didn’t make me wait long at all before seating me, and once I was at my table, I was quickly asked if I would like to start with a drink. That level of attentiveness made me feel valued as a customer right away.
For my meal, I ordered the French toast, and let me tell you—it was absolutely amazing. The texture was perfect, the flavor was rich, and it was clear that quality and care go into their food. You can truly taste the difference. I also ordered a cappuccino, which paired perfectly with the meal. It was smooth, well-balanced, and exactly what I was hoping for to start my morning.
What really stood out to me, though, was the service. The waitress was on point the entire time. She consistently checked on me to make sure everything was going well without ever being intrusive. That kind of service makes a huge difference and shows great attention to customer experience.
Overall, Maison Stivalet delivers excellent food, great coffee, and outstanding service. I highly recommend this place for breakfast if you’re looking for quality, comfort, and a welcoming atmosphere. I will definitely be coming back again.

I recently tried Maison Strivalet for the first time after hearing so many great things about it, but my experience was pretty disappointing. I ordered the ribeye steak and huevos rancheros, asking for the steak to be cooked medium rare. Unfortunately, when it arrived, it was well done. I mentioned it to the waiter, who took it back but brought the same steak back, saying he couldn’t cook it more because it was only an 8oz cut. I explained that it was already overcooked and not what I wanted.
Eventually, the manager Victor came over with a new steak that didn’t look very appealing—just plain and a bit grey, with some salt sprinkled on top. I decided to give it a try before sending it back, but as soon as I took a bite, I had to spit it out. It felt like it was taken out of the fridge and just put on a plate cold.
When I returned it, our waiter was the only one who seemed genuinely concerned and apologized. The manager, however, didn’t really engage or show any interest in fixing the situation; he just stood there, and the cooks in the kitchen just stared. I’ll add that even the waiter touched it and agreed it was still pretty cold. He was very apologetic and embarrassed that they even brought it out to me that way and that it was the manager himself that did so.
Considering all the hype about this place, I was really let down. It wasn't just about the steak not being cooked properly; it felt more like a lack of care for food safety and customer service. I didn’t end up paying for the meal, but it’s frustrating that the waiter was the only one stepping up. The manager definitely needs to do better.
The first photo is the original steak I was brought with the second one being the one they replaced it with.

We had such a wonderful experience at Maison Stivalet! Breakfast was outstanding—everything from the flavorful crab cakes to the delicious chilaquiles was perfectly made. The iced coffee was smooth and refreshing, and their beautiful macarons were the perfect sweet touch.
We also hosted my aunt’s baby shower in their private room, and it couldn’t have been a better choice. The room itself is very pretty and elegant, creating just the right atmosphere. The servers were attentive and kind, making sure everything ran smoothly and that we felt taken care of throughout.
Highly recommend both for a casual breakfast and for hosting special events—Maison Stivalet delivers on both food and experience!

We had a fantastic experience at Maison Stivalet! I ordered the Salmon Bagel, and it was absolutely delicious, fresh, flavorful, and beautifully balanced. The atmosphere is warm and cozy with a refined touch, and the service was excellent from start to finish.
For dessert, we split the Crookie (croissant cookie) three ways and it was out of this world. All the best parts of each - buttery, flaky, warm, and gooey in all the best ways. Honestly, worth a trip just for that alone.
Highly recommend for anyone looking for a unique French-inspired spot in McAllen. We’ll definitely be back!
