We first learned about FreshMex when they were parked outside our amenity center when I drove past them and took a pic of their truck. Our intentions were to build a professional relationship with them and hire them for future events since my wife is the event planning chair for our HOA community.
She left SEVERAL voice mail messages before she was finally able to contact Jessica by phone. She told her about the event for our community and explained the extreme importance of her promptly providing her with an invoice, Certificate of Insurance, and W9 as required by our HOA management company. She quoted her a price for the event and said that she would forward the documents to her soon.
After a few weeks and still having not received the documents she agreed to send her, she began calling and texting her as well as emailing, but never received an answer on the phone, or a response to her texts, or emails.
We later saw Jessica at the McKinney Marketplace and introduced ourselves. She apologized and said she hadn’t responded because she recently suffered a death in her family. She said she would definitely contact my wife with the needed information later that week. Based on the alleged circumstances, we accepted her explanation and waited for her to respond as promised. That was six weeks ago and she STILL has not responded, although the event is on October 1st.
I cannot understand, or believe that any reputable business owner would ignore a paying client who is going to pay in advance of the event. It is extremely discourteous, irresponsible, and unprofessional to put a potential client through months of uncertainty while stringing them along with excuses and no explanation, instead of just telling them upfront that she did not want to provide her services for the event.
Fortunately, my wife was able to locate a RELIABLE and responsive alternate to cater our event.

Fresh Mex killed it at our client event! Had over 300 people and they managed getting food out quickly with rave reviews from our clients! Communication was great through the booking process. Very impressed with the staff as well!

We hired Fresh Mex for a neighborhood event and it was GREAT! They were prompt and professional, booking was a breeze. Delicious easy menu that was quick to order and came out fast. Everything was so delicious, I especially liked the hibiscus tea. Would love to work with them again!

The best food and nicest people with this food truck! Communication was great throughout the whole process and they were super accommodating to our party. They served 150 people so fast and the food was hot and fresh. Seriously some of the best authentic Mexican food I’ve had in Texas. (Not the gross texmex) Also, if you support local small family businesses you have to book them!

I recently worked with Fresh Mex at a wedding last weekend that I coordinated, and it was an amazing experience! Jessica was amazing to work with...very communicative and accommodating (a wedding planner's dream!!) The food was also very enjoyable, and they got food to the guests quickly and efficiently. Jessica was also kind enough to stay and cut the cake for us as well. I hope to work with her again soon!

Tried them out at Tupps Brewery tonight. Absolute greatness. We made two runs at the tacos, stuffed avocado and breakfast burrito. The salsa is the best in town, hands down. And that moron that complained about the chips? Come on man. Give them a try, you will not be disappointed.
Had Fresh Mex food truck for a birthday party with approximately 100 guests. Once they arrived they parked where I needed them and I didn’t talk to them for the remainder of the party. Meaning they were so great the only comments I got during the event was how fabulous the food was or how nice and accommodating Jessica and Mark were. So I never had a need to go talk with them. Not one compliant or negative feedback. Great food and great service. At the time they were to be done they offered to leave a big tray of nachos and chips and ceviche for those remaining. Price was extremely reasonable considering I didn’t have to provide anything and having the food available outside the house is really a godsend. Like zero dishes, so convenient!

Fresh Mex Food truck is 5 star amazing!!!I was hosting a Christmas party and needed a new food truck as my previous food truck. I usually hire went out of business because of Covid. Jessica and her team were fabulous! I was a bit nervous as I had never worked with her, and surprisingly, had not heard of her food truck. I spoke with her for a lengthy conversation on the phone, and she answered every single question I had, and assured me, my guests will be well fed and happy. Fresh Mex food truck far exceeded my expectations. My guests loved the fact they handed out little beepers when your food was ready, and we all agreed the food was absolutely delicious. It was extremely tasty and fresh. Not only will I hire this food truck again, but when I see them at events like McKinney farmers market, I will for sure visit them and buy their stuffed avocado. It was filled with their delicious shrimp ceviche which was my favorite. There’s nothing on the menu I would not eat. It was all delicious!!!
